Maple Sausage Pigs in a Blanket

Ingredients:
4 links Pottstown's homemade Maple Sausage
1 egg
1 cup buttermilk
2 tablespoons salad oil
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Instructions:
Bake maple sausages on 325 degrees covered for 35-40 minutes
Beat egg; add remaining ingredients in order listed and beat until smooth. Grease heated griddle if necessary. (Tip: To test if griddle is hot enough to cook on, sprinkle with a few drops of water. If bubbles skitter around, the heat is just right!) Pour batter from tip of large spoon or from a pitcher onto hot griddle.
When finished, wrap each sausage inside a pancake and sprinkle with powdered sugar if desired.
