Blue Cheese Smothered Steak

Ingredients:
4 6 oz Fillet Mignon or 2 12 oz Ribeyes, New York Strips, or Sirloins
Char Crust Sundried Tomato & Garlic Meat Rub (available at Pottstown)
Frantoia Olive Oil (also available at Pottstown)
Non-stick oil spray
1 tablespoon butter
2 cups onion slices
1 teaspoon white sugar
4 oz blue cheese, crumbled (parmesan or asiago will also work)
Instructions:
Rub steaks with olive oil. Dredge (completely cover all sides) steak with Char Crust rub. For best results, after rubbing, drizzle or spritz non-stick spray on meat to add sizzle and prevent spices from burning.
Grill steaks to desired doneness.
While grilling meat, melt the butter in a skillet over medium heat. Cook onion slices in butter until soft, then stir in sugar. Continue cooking until onions are carmelized. Set aside.
When steaks are done, top each with a quarter of the carmelized onions and blue cheese.
