Low Country Shrimp Boil
Ingredients:
1 package Shrimp & Crab Boil mix1 tablespoon salt
3 quarts water
1 can (12 oz.) beer (optional)
8 medium red potatoes, cut in quarters
8 ears sweet corn, cut in half
4 pounds Contessa premium shrimp (available at Pottstown)
2 pounds Pottstown's Smoked Andouille Sausage
Instructions:
Bring Sauer's seasoning, salt, water and beer to a boil in an 8 quart pot. Add potatoes and cook over high heat for 13 minutes.
Add corn and smoked andouille to pot and continue to boil 7 minutes.
Add shrimp and cook for 4 additional minutes.
Drain cooking liquid. Pour contents of pot into several large bowls, shallow pails, or mound on a paper-covered picnic table.
