Sauerbraten



Ingredients:

5 lb. Beef Chuck Roast
1/4 teaspoon ginger
1 tablespoon salt
1 tablespoon sugar
2 medium onions, sliced
4 bay leaves
6 crushed peppercorns
1.5 cups wine vinegar
1.5 cups water
12 whole cloves
1 sliced lemons


Instructions:

Combine all ingredients in sauce pan and cook for 14 minutes.  In a heavy bag or container, add brine to the beef roast and refrigerate for 72 hours, turning occasionally.

Strain brine, set aside, and brown meat on all sides in 2 tablespoons of oil.  Add marineade and 1/2 cup chopped onions, 1/2 cup chopped carrots, 1/4 cup chopped celery, and 1 cup crushed ginger snap cookies.

Bake for 2 hours at 350 degrees or until tender.  Use marinade as gravy over hot noodles.
