Puffed Apple Pancake w/ Apple Cinnamon Sausage
Ingredients:
Homemade Pancake mix:6 Cups all-purpose flour
2/3 Cups sugar
2 Tablespoons baking powder
1 Tablespoon baking soda
(additional ingredients 1 egg & 3/4 cups milk)
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
RoastWorks Flame-Roasted Fuji Apples, thawed (available at Pottstown Meat & Deli)
powdered sugar
2 Tablespoons butter
4 Links Apple Cinnamon Sausage (available at Pottstown Meat & Deli)
Instructions:
Combine dry ingredients for homemade pancake mix. This can be stored for 6 monthsAdd 1 egg , cinnamon, vanilla and 3/4 Cups milk to 1 Cup pancake mix.
Bake sausage links for 30 to 45 minutes in covered baking dish at 350 degrees.
Melt 1 Tablespoon butter in 8 inch skillet. Coat well. Add 1/2 of the batter mix and spread with enough apples to cover. Bake for 15 to 20 minutes at 350 degrees until golden brown.
meanwhile, melt 1 tablespoon butter in skillet and saute 1 cup apples.
Turn pancake onto plate, add sauted apples and sprinkle with powdered sugar.
This recipe can be done in a larger skillet. Just put all the batter mix in a 12 inch skillet. I used cast iron skillets. I like them better to go from stove top to oven.
