Pina Colada Cake
Ingredients:
1 Angel Food cake (bake your own or buy pre-baked)20 oz crushed pineapple in juice
1 pkg instant coconut cream pudding
1/2 or 1/3 cup rum (dark or light) rum extract may also be used
8-10 oz Cool Whip
Instructions:
Mix dry pudding mix, pineapple w/ juice, and rum in a medium mixing bowl. Gently stir in whipped topping. Cut cake horizontally into 3 layers.Place bottom cake layer w/ the cut side up on a serving plate. Spread 1.3 cups of the pudding mixture onto the cake layer, then cover with second layer. Spread 1cup of the pudding mixture on second layer and then top with remaining cake layer. Spread the remaining pudding mixture on top.
Refrigerate atleast 1 hour or until ready to serve.
