Horseradish Crusted Prime Rib



Ingredients:

Boneless or Bone-in Prime Rib (6-8 lbs)
1/4 cup prepared horseradish
1/2 cup coarse salt (kosher or pretzel)
1/4 cup ground black pepper
1/2 cup Benissimo flavored olive oil (available at Pottstown)
6 cloves garlic

Instructions:

In a seperate bowl, smash the garlic and add the olive oil, horseradish, salt and pepper.  Use this paste to massage the beef generously.  Roast in oven uncovered for approximately 2 hours at 350 degrees, or until internal temperature is 135-145 degrees.

Let roast rest for 20 minutes before carving.
