Chorizo Breakfast Casserole




Ingredients:


1# Pottstown's homemade Chorizo Sausage, cooked and drained
1# ham, chopped
7 slices bread, crust removed and cubed
3 cups milk
6 eggs
2 cups shredded monterrey jack cheese


Instructions:

Spray 11X7X2 baking dish or foil pan with non-stick spray.  Cook chorizo until done and drain.  Combine bread cubes, and cheese.  Put ham and chorizo on top of that mixture.  In a large bowl, wisk the eggs and milk.  Pour on top of ham and sausage.

Refrigerate overnight.  Remove from refrigerator 30 minutes before baking.  Bake uncovered at 350 degrees 50-55 minutes, or until a knife inserted in middle of casserole comes out clean upon removal.
