Chipotle Pork Tenderloin w/ Peach Salsa
Ingredients:
1 Chipotle Marinated Pork Tenderloin1 cup sliced canned peaches, drained and chopped
1/3 cup chopped red onion
2 cloves garlic, minced
1.5 teaspoons minced fresh ginger root
1/3 cup chopped fresh cilantro
1/2 lime, juiced
salt and pepper to taste
Instructions:
In a bowl, mix the peaches, onion, garlic, ginger, cilantro, and lime. Season with salt and pepper. Chill until serving.Grill the pork tenderloin on indirect heat (coals to the outside) for approximately 30 minutes, turning once halfway through. Remove from grill and let sit for 5-10 minutes before slicing. Serve with salsa.
