Cheesemaking is an art. It takes knowledge. It takes experience. But most of all, it takes real care. It requires a willingness to put in the time, the effort and the money.
Sadly, many cheeses you find at the grocery store these days aren't very artfully made, and many producers cut corners. Some of a cheese's character, texture and authenticity is lost along the way. Unlike those of some other manufacturers, Boar's Head cheeses are not made with whey protein concentrates or milk fortefiers, and the cheese is fully aged to flavor perfection.
At Boar's Head, the art of cheese making is still taken very seriously. Most Boar's Head cheeses are made in small batches, usually by hand, by master cheesemakers who have passed the skill down through the generations. If an extra hour is needed producing it, or an extra month is needed aging it, so be it.
