Apple Cinnamon Sausage Stuffed Acorn Squash



Ingredients:

1 acorn squash halved and seeded
1/2 pound Pottstown's apple cinnamon sausage
1 cup Rice River Farms Festival Medley rice (available at our shop)
1/2 cup chopped apple


Instructions:

Prepare rice mix according to the directions on the box.  Set aside.
Place squash halves cut side down on plate and microwave for 5 minutes on high until tender, but firm.
Cook sausage until evenly browned.  Drain and set aside.
In a large bowl, mix together prepared rice, sausage and apple.  Stuff each squash half.  Cover with plastic wrap and microwave until squash is cooked through and soft (about 5 minutes).
You may add shredded monterey jack cheese at this point and cook an additional minute.
