Reuben Quiche


Ingredients

1/2 pound Barth's famous cooked Corned Beef, cut into pieces
4 ounces shredded swiss cheese
9 inch deep dish pie crust (if frozen, thaw completely)
1/2 cup sauerkraut
1/2 cup heavy cream
1 large egg
3 large egg yolks
8 ounces softened cream cheese

Instructions

Place swiss cheese in bottom of pie crust.  Top with the cut up pre-cooked corned beef.  Layer the corned beef with sauerkraut.  Whip together the cream, eggs, egg yolks, and cream cheese just until combined.  Pour mixture over pie.  Bake at 375 degrees in conventional oven for about 50 minutes or until knife inserted into custard comes out clean.

Cool to almost room temperature before slicing.
